CACAO COLLAGEN CUPCAKES

INGREDIENTS:
yields 6 servings
  • 60g all-purpose flour 
  • 25g cacao powder
  • 5g baking powder
  • Pinch of salt
  • 10g of Nutrili's Chocolate Collagen Peptides
  • 55g butter, softened (or vegan butter)
  • 100g granulated sugar
  • 60ml yogurt (or dairy free yogurt)
  • 2.5ml vanilla extract
  • 60ml milk of choice
DIRECTIONS:
  • Preheat your oven to 350°F (175°C), and line a cupcake pan with 6 cupcake liners.
  • In a mixing bowl, sift together the dry ingredients: flour, cacao powder, baking powder, salt, and Nutrili's Chocolate Collagen Peptides. Set aside.
  • In another mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, using a hand mixer or stand mixer.
  • Add the yogurt and vanilla extract to the creamed butter and sugar mixture. Beat until well combined.
  • Gradually add the dry ingredients mixture to the wet ingredients, alternating with the milk of choice. Mix until combined just right (be careful not to overmix).
  • Fill the cupcake liners with the batter, evenly distributing it until each is about two-thirds full.
  • Place the cupcake pan in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Wait for them to cool—if you can resist—then dig in!
